BBQ Chicken, Apple, Bacon and Cheddar Quesadillas Recipe

For the filling

  • 1 tablespoon olive oil
  • 1 cup cooked, shredded chicken
  • 1/2 cup BBQ sauce (your favorite kind)
  • 1 medium apple (crisp varieties like Honeycrisp or Granny Smith work well), cored and thinly sliced
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese

For the quesadillas

  • 4 large flour tortillas
  • Cooking spray or butter (for the skillet)


  • Large skillet or griddle
  • Spatula


1. Prep the filling

  • Heat the olive oil in a medium skillet over medium heat.
  • Add the shredded chicken and BBQ sauce. Stir to coat and heat through, about 2-3 minutes. Remove from heat.

2. Assemble

  • Heat a large skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
  • Place a tortilla on the heated skillet.
  • Sprinkle ¼ cup of the cheddar cheese onto half of the tortilla.
  • Top with ¼ of the chicken mixture, spreading evenly.
  • Add ¼ of the apple slices and ¼ of the crumbled bacon.
  • Sprinkle with another ¼ cup of cheddar cheese.

3. Cook the quesadillas

  • Fold the empty half of the tortilla over the filling.
  • Cook for 2-3 minutes per side, or until golden brown and the cheese is melted. Gently press with a spatula to help seal.
  • Repeat with the remaining tortillas and fillings.

4. Serve

  • Cut each quesadilla into wedges.
  • Serve immediately with your favorite toppings like sour cream, salsa, guacamole, or chopped cilantro.


Customize it: Swap out cheddar for your favorite melty cheese. Add other toppings like sliced onion or bell pepper sautéed with the chicken.

Make ahead: Prepare the filling a day in advance. Assemble and cook the quesadillas just before serving.

Reheating: For best results, reheat leftovers in a skillet or oven to maintain a crispy texture.
