BBQ Chicken Quesadillas Recipe


For the BBQ chicken:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup your favorite BBQ sauce

For the quesadillas:

  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese (or a Mexican cheese blend)
  • 1/2 cup chopped red onion (optional)
  • 1/4 cup chopped fresh cilantro (optional)

For serving (optional):

  • Sour cream
  • Salsa
  • Guacamole
  • Sliced jalapeños


Cook the chicken:

  • Preheat a skillet or grill pan over medium-high heat.
  • Season chicken with salt, pepper, garlic powder, and onion powder.
  • Add olive oil to the pan and cook chicken for 5-7 minutes per side, or until cooked through (internal temperature reaches 165°F).
  • Let the chicken rest for a few minutes, then shred it using two forks.
  • Toss the shredded chicken with the BBQ sauce.

Assemble the quesadillas:

  • Heat a large skillet or griddle over medium heat.
  • Place one tortilla in the pan. Sprinkle a generous layer of cheese over half of the tortilla.
  • Top the cheese with a portion of the BBQ chicken, and add red onion and cilantro if desired. Add another light layer of cheese on top.
  • Fold the empty half of the tortilla over the filling.

Cook the quesadillas:

  • Cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted. Gently press down with a spatula to help the quesadilla seal.
  • Repeat with the remaining tortillas and fillings.

Slice and serve:

  • Cut each quesadilla into wedges.
  • Serve immediately with your favorite toppings like sour cream, salsa, guacamole, and sliced jalapeños.


  • Customization: Feel free to add other vegetables like corn, diced bell peppers, or black beans for extra flavor and texture.
  • Spice it up: Use a spicy BBQ sauce or add a pinch of cayenne pepper to the chicken for a kick.
  • Grill it: These quesadillas can also be cooked on a grill for a lovely smoky flavor.
  • Make ahead: Prepare the BBQ chicken in advance and store it in the refrigerator. Assemble and cook the quesadillas just before serving.
