Caprese Lasagna with Spicy Turkey Sausage Recipe

  • 12 lasagna noodles (oven-ready or traditional)
  • Spicy Sausage and Sauce
  • 1 lb spicy Italian turkey sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon red pepper flakes (adjust for your desired spice level)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese Mixture

  • 1 (15-ounce) container whole-milk ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Caprese Topping

  • 2 cups shredded mozzarella cheese
  • 2 large tomatoes, thinly sliced
  • 1/2 cup fresh basil leaves


  • Large skillet
  • 9×13 inch baking dish
  • Large pot (if using traditional noodles)


1. Cook the noodles

  • If using traditional lasagna noodles, cook according to package directions until al dente.
  • Drain and rinse with cool water.

2. Make the sauce

  • Brown the turkey sausage in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  • Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  • Add the crushed tomatoes, tomato sauce, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.

3. Make the cheese mixture

  • In a medium bowl, combine the ricotta cheese, egg, Parmesan cheese, chopped basil, salt, and pepper. Mix well.

4. Assemble the lasagna

  • Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  • Spread a thin layer of sauce on the bottom of the dish.
  • Place 3-4 lasagna noodles (depending on size) in a single layer.
  • Spread half of the ricotta mixture over the noodles.
  • Top with a layer of turkey sausage mixture.
  • Add a layer of tomato slices and sprinkle some basil leaves
  • Sprinkle with about 1/2 cup of mozzarella cheese.
  • Repeat the layering process once more.
  • Top the final layer with the remaining noodles, a final layer of sauce, and the rest of the mozzarella cheese.

5. Bake

  • Cover the lasagna with foil and bake for 25 minutes.
  • Uncover and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly, and the noodles are tender.

6. Rest and serve

  • Let the lasagna rest for 10-15 minutes before cutting and serving.
  • Garnish with fresh basil leaves if desired.


For traditional comfort food lasagna, use regular Italian sausage (sweet or spicy).

Adjust the red pepper flakes according to your desired spice level.

For a richer tomato sauce, add a splash of red wine while it simmers.

Feel free to add other vegetables like sliced zucchini or mushrooms to the sauce.
