Cheeseburger Quesadillas with Special Sauce Recipe


For the Quesadillas:

  • 1 pound ground beef
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • Optional toppings: chopped pickles, diced onion, tomato slices, shredded lettuce

For the Special Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon garlic powder


Make the Special Sauce:

  • Combine all special sauce ingredients in a small bowl. Whisk until smooth.
  • Refrigerate until ready to use.

Cook the Beef:

  • Heat a large skillet over medium-high heat. Add vegetable oil, then ground beef.
  • Season with salt and pepper. Cook, breaking up the meat with a spoon until browned and cooked through. Drain off any excess grease.

Assemble the Quesadillas:

  • Reduce heat to medium. Place one tortilla in the skillet. Sprinkle a generous amount of cheese over half of the tortilla.
  • Top the cheese with a portion of the cooked beef. Add any desired optional toppings like pickles or onions.
  • Sprinkle another layer of cheese on top.
  • Fold the empty half of the tortilla over the filling.

Cook the Quesadillas:

  • Cook for 1-2 minutes per side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with remaining ingredients.


  • Cut the quesadillas into wedges.
  • Serve warm with the special sauce for dipping.


  • Customization: Feel free to experiment with different cheeses like Monterey Jack, Colby Jack, or even pepper jack for a kick. Get creative with extra toppings!
  • Crispy Tortillas: For an extra crispy tortilla, lightly brush both sides with melted butter or oil before placing it in the skillet.
  • Make-Ahead: Prepare the special sauce and cook the beef ahead of time. Assemble and cook the quesadillas just before serving.
