Cheesy Vegetable, Sausage and Rice Casserole Recipe

  • 1 pound Italian sausage (mild, hot, or a mix), casings removed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10-ounce) package frozen mixed vegetables (such as carrots, peas, and corn)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (10.75-ounce) can condensed cream of mushroom soup
  • 1 cup chicken or vegetable broth
  • 1 1/2 cups uncooked long-grain white rice
  • 2 cups shredded cheddar cheese

  • Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  • Brown the sausage: In a large skillet over medium-high heat, brown the sausage, breaking it up with a spoon as it cooks. Drain off any excess grease.
  • Sauté vegetables: Add the olive oil to the skillet. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the frozen mixed vegetables, garlic, oregano, salt, and pepper. Cook for another 2-3 minutes, until the vegetables begin to thaw.
  • Combine the sauce: Stir in the diced tomatoes, cream of mushroom soup, and chicken broth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
  • Add the rice: Stir in the uncooked rice and remove from heat.
  • Assemble the casserole: Transfer the mixture to the prepared baking dish. Sprinkle evenly with the cheddar cheese.
  • Bake: Cover the dish with foil and bake for 30 minutes. Uncover and bake for an additional 5-10 minutes, or until cheese is melted and bubbly and the rice is tender.
  • Rest and serve: Let the casserole stand for 5 minutes before serving.


  • Customization is key: Substitute the Italian sausage with ground beef, turkey, or your favorite vegetarian alternative. Play with different vegetables (try broccoli, cauliflower, etc.), and swap out the cheddar for another melty cheese.
  • Make it spicier: Add a pinch of red pepper flakes with the spices for some heat.
  • Fresh herbs: Finish with chopped fresh parsley or basil for extra flavor.
