Chocolate Covered Strawberry Brownie Bites Recipe



  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Chocolate Coating:

  • 1 cup semisweet chocolate chips or chopped chocolate
  • 1/4 cup heavy cream

Strawberry Filling:

  • 12 fresh strawberries, hulled and halved


  • Preheat the oven to 350°F (175°C). Grease a mini muffin pan or line it with paper liners.
  • Make the brownies: In a large bowl, whisk together the melted butter, sugar, eggs, and vanilla extract until well combined.
  • In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix.
  • Spoon the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
  • Bake for 10-12 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let the brownies cool completely in the pan on a wire rack.
  • While the brownies cool, prepare the chocolate coating. In a microwave-safe bowl, heat the heavy cream on high for 30-60 seconds, until it simmers.
  • Pour the hot cream over the chocolate chips or chopped chocolate and let it sit for 5 minutes.
  • Whisk the chocolate mixture until smooth and glossy. Let the ganache cool slightly until it thickens enough to coat the brownies.
  • Once the brownies are cool, carefully dip the top of each brownie into the chocolate ganache, letting the excess drip back off.
  • Place a strawberry half on top of the chocolate-coated brownie.
  • Transfer the brownie bites to a wire rack to let the chocolate set completely. You can refrigerate them for 30 minutes to speed up the process.


  • For a richer brownie flavor, use dark chocolate instead of semisweet chocolate for the coating.
  • If you don’t have a mini muffin pan, you can bake the brownies in an 8×8 inch baking pan. Just adjust the baking time accordingly (around 20-25 minutes).
  • You can also use a different type of fruit filling, such as raspberries or blueberries.
  • Store leftover brownie bites in an airtight container in the refrigerator for up to 3 days.
