Cilantro Lime Rice Recipe


  • Rice: 1 cup long-grain white rice (jasmine or basmati are excellent choices)
  • Liquid: 1 ½ cups water, OR for richer flavor, use chicken or vegetable broth
  • Fat: 1 tablespoon olive oil or butter
  • Aromatics: ½ small onion, finely chopped (optional)
  • Garlic: 1-2 cloves garlic, minced (optional)
  • Citrus: Juice of 1 lime + zest from ½ the lime
  • Herb: ½ cup chopped fresh cilantro
  • Salt: ½ teaspoon, or adjust to taste
  • Spice (Optional): Pinch of red pepper flakes or a small bit of diced jalapeño


  • Rinse the rice: Rinse the rice in a fine-mesh strainer under cold water until the water runs clear. This removes excess starch and prevents clumping.
  • Sauté aromatics (optional): Heat the olive oil or butter in a medium saucepan over medium heat. Add the onions and cook until softened, about 3-5 minutes. Add the garlic and sauté for another 30 seconds, until fragrant.
  • Toast the rice (optional): Add the rice to the pan, stirring to coat with oil/butter. Toast for 1-2 minutes, or until a few grains turn slightly golden. This step is optional but adds a nutty flavor.
  • Add liquid and salt: Pour in the water or broth and stir. Add the salt.
  • Bring to a boil, then simmer: Bring the mixture to a boil over high heat. Once boiling, reduce heat to low, cover the pan tightly, and simmer for 15-20 minutes (or according to package instructions for your rice).
  • Rest: Remove the pan from the heat and let it stand, covered, for an additional 5-10 minutes. This allows the rice to finish steaming and absorb any remaining liquid.
  • Fluff and flavor: Fluff the rice with a fork. Stir in the lime juice, lime zest, cilantro, and optional spice (if using). Taste and adjust salt or lime juice as needed.
  • Serve and enjoy: Your flavorful cilantro lime rice is ready to be served as a delicious side dish to your favorite meals!


  • Rice Variety: Experiment with different rice varieties like brown rice or wild rice blends. Cooking times may need to be adjusted.
