This recipe recreates the refreshing and fizzy beverage from Caribou Coffee. You can make your own peach simple syrup to capture the perfect balance of sweet and tart flavors.

For the Peach Simple Syrup

  • 1 cup water
  • 1 cup sugar
  • 2 peaches, sliced (or 12 ounces frozen peaches)

For the Sparkling Tea

  • Brewed black tea, chilled (amount depends on desired strength)
  • Club soda, chilled
  • Ice

1. Make the Peach Simple Syrup

  • In a saucepan, combine water, sugar, and peaches. Bring to a boil over medium heat, stirring occasionally to dissolve the sugar.
  • Reduce heat and simmer for 5 minutes.
  • Remove the pot from heat and let the syrup cool completely.
  • Strain the syrup to remove the peach slices. You can reserve the peach slices for other uses like smoothies, pancakes, or ice cream.
  • Chill the simple syrup in the refrigerator.

2. Assemble the Sparkling Tea

  • Fill a glass with ice.
  • Pour in chilled black tea to fill about half the glass. The amount of tea will depend on your desired strength.
  • Add 2-3 tablespoons of chilled peach simple syrup.
  • Top the glass with chilled club soda.
  • Stir gently to combine and enjoy!

For a stronger peach flavor, use more peach simple syrup.

You can adjust the amount of club soda to control the level of fizz.

For a sweeter drink, add a splash of your favorite fruit juice.

If you don’t have black tea bags, you can use loose leaf tea or a strong tea concentrate.

This recipe is easily doubled or tripled to serve a crowd.
