CPK BBQ Chicken Pizza Recipe


For the Chicken:

  • 1 lb boneless, skinless chicken breast
  • Salt and pepper
  • 1/4 cup + 2 tablespoons BBQ sauce (your favorite kind)

For the Pizza:

  • 1 lb pizza dough (store-bought or homemade)
  • Olive oil
  • 1/2 cup BBQ sauce
  • 1 cup shredded smoked gouda cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped


Prepare the Chicken:

  • Preheat oven to 400°F (200°C).
  • Season chicken breasts with salt and pepper.
  • Place chicken in a baking dish and brush with 2 tablespoons of BBQ sauce.
  • Bake for 20-25 minutes, or until cooked through. Let cool slightly, then dice or shred into bite-sized pieces.

Assemble the Pizza:

  • Preheat oven to its highest setting (500°F/260°C or higher if possible). Place a pizza stone or baking sheet in the oven to preheat as well.
  • Let the pizza dough come to room temperature for easier handling.
  • On a lightly floured surface, stretch or roll the dough into a 12-inch circle.
  • Drizzle a bit of olive oil over the dough, then spread the 1/2 cup BBQ sauce evenly, leaving a small border.
  • Sprinkle on half of the smoked gouda, then half of the mozzarella cheese.
  • Top with the cooked chicken, then the thinly sliced red onion.
  • Finish with the remaining mozzarella and smoked gouda.

Bake and Finish:

  • Carefully transfer the pizza to your preheated pizza stone or baking sheet.
  • Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes.
  • Garnish with chopped fresh cilantro, slice, and enjoy!
