CPK California Club Pizza Recipe


For the Dough:

  • 1 teaspoon active dry yeast
  • 1 cup warm water (100-110°F)
  • 1 teaspoon sugar
  • 2 ½ cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt

For the Toppings

  • 1 tablespoon olive oil
  • 1 boneless, skinless chicken breast, pounded thin
  • Salt and black pepper, to taste
  • 3-4 slices bacon, cooked and crumbled
  • 2 cups shredded mozzarella cheese
  • 1 large tomato, sliced
  • 1 avocado, sliced
  • 4 cups romaine lettuce, shredded
  • ¼ cup mayonnaise
  • 1 tablespoon lemon juice
  • ¼ teaspoon black pepper


Make the Dough:

  • Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  • Add dry ingredients: Add flour and salt to the yeast mixture.
  • Incorporate oil: Add olive oil andmix until a shaggy dough starts to form.
  • Knead: Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  • Rise: Place the dough in a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-1 ½ hours, or until doubled in size.

Prepare the Toppings:

  • Cook the chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper. Cook for 3-5 minutes per side, or until cooked through. Let the chicken rest, then slice into thin strips.
  • Prep the avocado: Slice the avocado lengthwise, remove the pit, and cut into slices.
  • Make the dressing: In a small bowl, whisk together mayonnaise, lemon juice, and pepper.

Assemble and Bake the Pizza:

  • Preheat the oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, preheat it as well.
  • Shape the dough: Punch down the risen dough and divide it into two equal portions for two smaller pizzas. Roll or stretch each piece of dough into a 10-12 inch round.
  • Layer the toppings: Lightly brush olive oil on the pizza dough. Spread a layer of mozzarella cheese, followed by the cooked chicken, crumbled bacon, and tomato slices.
  • Bake: Bake the pizza for 10-12 minutes, or until the crust is golden brown and cheese is melted and bubbly.
  • Finish and serve: Remove the pizza from the oven. Top with sliced avocado, shredded lettuce, and a drizzle of the dressing. Cut into slices and serve immediately


  • For added flavor, grill the chicken breast instead of cooking it in a skillet.
