Creamy Chicken Pasta Recipe (No Pasta Packet Required)

  • Pasta: 12 ounces (350g) of your preferred pasta shape (fettuccine, penne, farfalle all work well)
  • Chicken: 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Oil and Butter: 2 tablespoons olive oil, 2 tablespoons butter
  • Aromatics: 1 small onion, diced, 3 cloves garlic, minced
  • Vegetables (optional): 1/2 cup chopped carrots, 1/2 cup chopped celery
  • Seasoning: 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon dried thyme, 1/4 teaspoon garlic powder
  • Flour: 3 tablespoons all-purpose flour
  • Liquids: 2 cups chicken broth, 1 cup heavy cream or whole milk
  • Cheese: 1/2 cup grated Parmesan cheese
  • Fresh Herbs (optional): Chopped fresh parsley for garnish


1. Cook the pasta: Bring a large pot of salted water to a boil, add the pasta, and cook according to the package directions until al dente. Drain and set aside.

2. Prepare the chicken: Season the chicken pieces with salt, pepper, and garlic powder. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3. Sauté the vegetables: In the same skillet, melt the butter and add the remaining tablespoon of olive oil. Add the onion, carrots, and celery (if using) and sauté until softened, about 5 minutes. Stir in the garlic and cook for another 30 seconds.

4. Create the sauce base: Sprinkle the flour over the vegetables and whisk until incorporated. Cook for 1 minute, stirring constantly. Gradually whisk in the chicken broth and cream (or milk), making sure to dissolve any lumps.

5. Thicken the sauce: Bring the sauce to a simmer and cook until it thickens slightly, about 5 minutes. Season with salt, pepper, and dried thyme.

6. Assemble the dish: Add the cooked chicken and pasta to the sauce. Stir to combine until everything is coated and heated through.

7. Finish and serve: Stir in the Parmesan cheese. Garnish with fresh parsley, if desired, and serve immediately.


Customize the flavors: Add other veggies like mushrooms, broccoli, or spinach. Substitute the thyme with Italian seasoning, or add a pinch of red pepper flakes for a bit of spice.

Make it richer: To make it extra decadent, stir in a dollop of cream cheese or mascarpone for an even creamier sauce.

Leftovers: Creamy chicken pasta stores well in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
