Creamy Mushroom Parmesan Pasta – Decadent Gluten Free Pasta Recipe


  • 12 ounces gluten-free pasta: Choose your favorite type (fettuccine, pappardelle, penne all work well)
  • 4-5 strips bacon (optional, omit for vegetarian)
  • 1 tablespoon olive oil
  • 1 pound mixed mushrooms (sliced cremini, button, shiitake, etc.)
  • 1/2 cup chopped onion
  • 3 cloves garlic (minced)
  • 1/2 teaspoon dried thyme
  • 1 cup heavy cream
  • 1/2 cup vegetable or chicken broth
  • 1 cup freshly grated Parmesan cheese (plus more for serving)
  • Salt and freshly ground black pepper
  • Chopped fresh parsley (for garnish, optional)


Cook the pasta:

  • Bring a large pot of salted water to a boil.
  • Add the gluten-free pasta and cook according to package directions until al dente. Drain and set aside.

Prep the bacon and mushrooms:

  • If using bacon, cook it in a large skillet over medium heat until crisp. Transfer the bacon to a paper towel-lined plate and crumble.
  • In the same skillet, add the olive oil and heat over medium. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and it evaporates.

Sauté the aromatics:

  • Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  • Add minced garlic and dried thyme, cooking for an additional minute until fragrant.

Make the creamy sauce:

  • Pour in the heavy cream and vegetable or chicken broth. Bring the mixture to a gentle simmer, stirring occasionally.
  • Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Season to taste with salt and plenty of fresh black pepper.

Combine everything:

  • Add the cooked pasta to the skillet with the creamy sauce. If using bacon, add the crumbled bacon now as well. Toss gently until the pasta is well coated.

Garnish and serve:

  • Remove the pan from heat. Sprinkle with additional Parmesan cheese and chopped fresh parsley, if desired. Serve immediately while hot.
