Crispy Gnocchi with Zucchini and Sweet Corn Recipe

  • 1 (16-ounce) package shelf-stable gnocchi
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 1/2 medium zucchini, diced
  • 1/2 cup sweet corn (fresh or frozen)
  • 1/4 cup diced onion
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried thyme
  • 1/4 cup heavy cream or half & half
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley leaves, chopped, for garnish


1. Cook the gnocchi: Boil the gnocchi according to the package directions until they float to the surface. Drain well and set aside.

2. Prep the veggies: While the gnocchi cooks, dice the zucchini, onion, and mince the garlic. If using frozen corn, let it thaw.

3. Crisp the gnocchi: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cooked gnocchi and cook, undisturbed, for 2-3 minutes until golden brown on one side. Flip and cook another 2 minutes until crisp on both sides. Remove gnocchi from the skillet and set aside.

4. Sauté the vegetables: Add the remaining tablespoon of olive oil and the butter to the skillet. Add the zucchini, corn, onion, garlic, and thyme. Season with salt and pepper. Cook, stirring occasionally, for 4-5 minutes, or until the vegetables soften.

5. Make the sauce: Reduce heat to low. Stir in the heavy cream or half & half. Bring to a gentle simmer, stirring, for 1 minute until slightly thickened.

6. Assemble: Return the gnocchi to the skillet. Add the Parmesan cheese and toss to combine and coat everything in sauce. Season with additional salt and pepper to taste.

7. Garnish and serve: Sprinkle with fresh basil or parsley and serve immediately.


Don’t overcrowd the pan: Cook the gnocchi in batches if necessary to prevent them from steaming rather than crisping.

Fresh corn: If you have fresh corn on the cob, add a burst of summer flavor! Cut the kernels off the cob and use them in the recipe.

Variations: Add a pinch of red pepper flakes for a bit of heat, or stir in other vegetables like cherry tomatoes or spinach.
