Crock Pot Chicken Sandwiches Recipe

  • 1-1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese

Flavor Options (Choose one or combine!)

  • Crack Chicken: 4-6 slices cooked bacon, crumbled
  • Mississippi Style: ½ cup pepperoncini peppers (include some juice), 1 packet (1 ounce) Au Jus gravy mix
  • Hot Honey: ¼ cup honey, 2 tablespoons apple cider vinegar, 1-2 tablespoons hot sauce (adjust to taste)


  • Soft sandwich rolls or buns
  • Lettuce, tomato, onion (optional)
  • Pickles (optional, great with Mississippi style)


  • Crock Pot (slow cooker)
  • Forks for shredding


  • Prep the Crock Pot: Lightly grease your Crock Pot with cooking spray.
  • Add Ingredients: Place the chicken in the Crock Pot. Sprinkle the ranch seasoning evenly over the chicken.

Flavor Boost

  • Crack Chicken: Top chicken with crumbled bacon.
  • Mississippi Style: Add pepperoncini peppers (with juice) and Au Jus gravy mix.
  • Hot Honey: Drizzle honey, vinegar, and hot sauce over the chicken.
  • Creamy Base: Place the softened cream cheese on top of the chicken.
  • Cook: Cover the Crock Pot and cook on low for 4-6 hours or high for 2-3 hours, until the chicken reaches an internal temperature of 165°F and shreds easily.
  • Shred & Mix: Remove the chicken and shred it with two forks. Return the shredded chicken to the Crock Pot and stir well to combine with the melted cream cheese and any other ingredients.
  • Finish: Stir in the shredded cheddar cheese and let it melt (this should take a few minutes on warm).
  • Serve: Spoon a generous portion of the chicken mixture onto your sandwich rolls. Add your favorite toppings and enjoy!


Chicken: Use thighs for extra juicy results. If frozen, thaw completely before adding to the slow cooker.

Serving Size: Adjust the chicken amount for larger or smaller portions.

Toppings: Get creative! Sliced avocado, coleslaw, or your favorite sauce add extra deliciousness.

Storage: Leftovers keep well in the refrigerator for 3-4 days in an airtight container.
