Cucumber Tomato Salad with Italian Vinaigrette – Fresh Side Dish Recipe

For the salad:

  • 2 medium English cucumbers, sliced and quartered
  • 1 pint cherry or grape tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped (or substitute 1 teaspoon dried basil)
  • Salt and freshly ground black pepper to taste

For the Italian Vinaigrette:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon white wine vinegar (or substitute additional red wine vinegar)
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried marjoram (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Make the vinaigrette:

  • Combine all vinaigrette ingredients in a small jar with a lid, or a small bowl. Shake or whisk vigorously until well combined.

Prepare the vegetables:

  • Slice the cucumbers and quarter the slices.
  • Cut the tomatoes in half.
  • Thinly slice the red onion.

Assemble the salad:

  • In a large bowl, combine the cucumbers, tomatoes, red onion, and chopped basil.
  • Pour most of the vinaigrette over the salad and toss to coat everything evenly. Reserve a bit for extra drizzling at the end, if desired.
  • Season with salt and pepper to taste.

Chill and serve:

  • Refrigerate the salad for at least 30 minutes to allow flavors to meld. This salad actually tastes better with some marinating time.
  • Before serving, give the salad another toss and drizzle with any remaining vinaigrette.

  • Tomato variety: Choose ripe, flavorful tomatoes like vine-ripened or heirloom varieties for the best results.
  • Cucumber type: English cucumbers have thinner skin and fewer seeds, making them ideal for this salad.
  • Make ahead: You can make the vinaigrette several days in advance and store it in the refrigerator. The salad itself is best if assembled shortly before serving, but you can prep the vegetables ahead of time.
  • Additions: Feel free to add other ingredients like sliced bell pepper, crumbled feta cheese, or Kalamata olives.

Enjoy your fresh and tasty Cucumber Tomato Salad with Italian Vinaigrette!
