Del Taco’s Chicken Soft Tacos Recipe

Chicken & Marinade:

  • 1.5 lbs boneless, skinless chicken thighs (breasts can work but thighs are juicier)
  • 3 tablespoons taco seasoning (store-bought, or use your favorite blend)
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

Secret Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1/2 lime
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1-2 tablespoons milk (for desired consistency)

  • 8-10 small flour tortillas
  • Shredded cheddar cheese
  • Shredded iceberg lettuce
  • Diced tomatoes

Marinade the Chicken:

  • Cut the chicken into bite-sized pieces.
  • Combine taco seasoning, lime juice, garlic, and vegetable oil in a bowl.
  • Add the chicken and toss to coat thoroughly.
  • Marinate in the refrigerator for at least 30 minutes, ideally 4-6 hours for maximum flavor.

Make the Secret Sauce:

  • Whisk together mayonnaise, sour cream, lime juice, garlic powder, and salt.
  • Gradually add milk until you reach your desired sauce consistency.

Cook the Chicken:

  • Heat a skillet or grill over medium-high heat.
  • Remove chicken from marinade and cook until browned and cooked through (about 5-7 minutes per side). Internal temperature should reach 165°F.
  • Let the chicken rest for a few minutes before shredding or dicing.

Warm the Tortillas:

  • Heat each tortilla in a dry skillet for a few seconds per side until soft and pliable. Alternatively, wrap a stack of tortillas in a damp paper towel and microwave for 30 seconds.

Assemble the Tacos:

  • Place some chicken in the center of each tortilla.
  • Top with shredded lettuce, diced tomatoes, and cheddar cheese.
  • Drizzle with the secret sauce.
  • Serve immediately and enjoy!

Customization Tips

  • Heat level: Adjust the amount of taco seasoning or add hot sauce for spicier tacos.
  • Creamier sauce: Use less milk or substitute with more sour cream.
  • Additional toppings: Consider chopped onions, cilantro, avocado, or your favorite salsa.
