Del Taco’s Spicy Grilled Chicken Burritos Recipe


Chicken Marinade:

  • 1 pound boneless, skinless chicken breasts (thinly sliced or cubed)
  • 1/4 cup olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Burrito Fillings:

  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 1/4 cup diced jalapeno (optional)
  • 1/4 cup chopped fresh cilantro

Optional Creamy Cilantro-Lime Sauce:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • Juice of 1/2 lime
  • Pinch of salt


  • Make the Marinade: In a bowl, whisk together olive oil, chili powder, oregano, cumin, garlic powder, salt, black pepper, and cayenne pepper. Add the chicken and toss to coat evenly. Marinate for at least 30 minutes, or up to overnight for the best flavor.
  • Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes per side, or until cooked through and slightly charred. Let the chicken rest for 5 minutes before slicing thinly.
  • Warm the Tortillas: Warm the tortillas in the microwave for 10-15 seconds each, or heat over a skillet until soft and pliable.
  • Optional: Make the Sauce: In a small bowl, whisk together the sour cream, mayonnaise, cilantro, lime juice, and salt.
  • Assemble the Burritos: Lay out each tortilla. Divide the chicken, cheese, tomatoes, onion, jalapeno (if using), and cilantro evenly among the tortillas. Add a dollop of the creamy cilantro-lime sauce, if using.
  • Roll the Burritos: Fold the bottom third of the tortilla up. Then, fold in the sides and continue rolling to form a closed burrito.
  • Optional: Pan-fry the Burritos: For a slightly crispy burrito, heat a lightly oiled skillet over medium heat. Place burritos seam-side down and cook for 1-2 minutes per side until lightly browned.


  • Customize the spice level by adjusting the amount of cayenne pepper.
  • Feel free to add your favorite burrito toppings like lettuce, guacamole, or other sauces.
  • For a vegetarian option, swap out the chicken for grilled tofu or seasoned black beans.
