Egg and Chorizo Avocado Toasts Recipe

For the avocado mash:

  • 1 ripe avocado, halved and pitted
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro (optional)

For the chorizo and eggs:

  • 4 ounces Spanish-style chorizo, casing removed
  • 1 tablespoon olive oil
  • 4 slices bread (your favorite kind – sourdough, whole wheat, or gluten-free)
  • 4 large eggs
  • Salt and pepper to taste

Toppings (optional):

  • Sliced cherry tomatoes
  • Cotija cheese or crumbled feta
  • Hot sauce

Prepare the avocado mash:

  • Scoop the avocado flesh into the medium bowl.
  • Add salt, pepper, and lime juice. Roughly mash with the fork, leaving it slightly chunky.
  • Stir in cilantro (if using) and set aside.

Cook the chorizo:

  • Crumble chorizo into the large skillet. Cook over medium heat, stirring occasionally, until browned and cooked through (about 5-7 minutes). Drain off any excess fat.

Toast the bread:
