Feta Stuffed Buffalo Chicken Meatballs Recipe


For the meatballs

  • 1 lb ground chicken (lean or extra-lean)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 large egg white
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon ranch dressing mix (or substitute with Italian seasoning)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled or cut into small 1/2-inch cubes

For the sauce

  • 1/2 cup buffalo wing sauce (choose your preferred heat level)
  • 2 tablespoons butter

Optional Garnishes

  • Chopped fresh parsley or chives
  • Crumbled blue cheese


1. Prep and mix the meatball base

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil or parchment paper and lightly grease it.
  • In a large bowl, combine ground chicken, red onion, garlic, egg white, breadcrumbs, ranch dressing mix (or Italian seasoning), salt, and pepper. Mix gently until just combined (avoid overmixing).

2. Stuff the meatballs

  • Divide the chicken mixture into roughly 16 equal portions.
  • Flatten a portion in your palm, place a feta cube in the center, and carefully form the meat around the cheese to create a sealed ball.
  • Place the stuffed meatballs on the prepared baking sheet.

3. Bake

  • Bake the meatballs for 18-22 minutes, or until cooked through and the internal temperature reaches 165 degrees F (74 degrees C).

4. Make the buffalo sauce

  • While the meatballs bake, melt the butter in a large skillet or saucepan over medium heat.
  • Add the buffalo wing sauce and stir to combine.

5. Coat and finish

  • Carefully transfer the cooked meatballs to the skillet with the buffalo sauce. Gently toss to coat them evenly.
  • Remove skillet from heat.

6. Serve

  • Serve the meatballs immediately. If desired, garnish with fresh parsley or chives and/or crumbled blue cheese for an extra flavor boost.


Handling the meat: For easier handling, lightly spray your hands with cooking spray before shaping the meatballs.

Cheese choice: Feel free to experiment with different cheese types for stuffing. Mozzarella cubes or a mix of cheddar and mozzarella also work well.

Serving suggestions: These meatballs make excellent appetizers, snacks, or a main course component. Serve them alongside a salad, steamed veggies, or rice. You can also spear them with toothpicks for easy party snacking.
