Fig & Prosciutto Roll Ups Recipe


  • 12 slices prosciutto (look for thicker slices for easier handling)
  • 4 oz goat cheese (softened; lemon-flavored goat cheese adds a lovely tang, but plain also works)
  • 1/2 cup fig preserves
  • 2 cups baby arugula (or your favorite delicate greens)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Freshly cracked black pepper

Optional Additions:

  • Thinly sliced fresh figs
  • Balsamic glaze for drizzling
  • Fresh herbs (basil, thyme, oregano)


Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, and a pinch of black pepper. Set aside.

Prepare the spread: In another small bowl, mix the softened goat cheese until creamy. If it’s very firm, a splash of the dressing can help loosen it.

Assemble the roll-ups:

  • Lay out a prosciutto slice. Spread a thin layer of goat cheese on the wider half of the slice.
  • Top the goat cheese with a teaspoon or so of fig preserves.
  • If using fresh figs, add one or two thin slices on top of the fig preserves.
  • Place a few arugula leaves (or greens of choice) on top.
  • Drizzle lightly with some of the lemon dressing.
  • Season with freshly cracked black pepper.
  • Starting from the wider end, carefully roll up the prosciutto, enclosing the fillings.
  • Repeat with the remaining prosciutto slices and ingredients.

Chill and serve:

  • Refrigerate the roll-ups for at least 30 minutes to help them firm up and for the flavors to blend.
  • To serve, cut the roll-ups in half if desired. Arrange on a serving platter.
  • If desired, drizzle with a touch of balsamic glaze and garnish with fresh herbs.


  • Handling prosciutto: If the prosciutto seems very delicate, chill it slightly before working with it.
  • Make-ahead: You can prepare the roll-ups a few hours in advance and keep them chilled until ready to serve.
  • Variations: Experiment with different cheeses (Boursin, ricotta), add a touch of garlic to the cheese mixture, or swap the greens for microgreens or fresh herbs.
