Gluten-Free Mozzarella Bites Recipe

Yields: About 24 mozzarella bites

Cook time: 10-15 minutes (depending on method)


  • 12 mozzarella string cheese sticks (make sure they are gluten-free)
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 cup gluten-free panko breadcrumbs (or regular breadcrumbs if panko is unavailable)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp milk (dairy or plant-based)
  • Oil for frying or baking (vegetable, canola, or light olive oil)
  • Marinara sauce for dipping (store-bought or homemade)


Getting Started:

  • Cut the cheese: Unwrap the string cheese and cut each stick into 2 or 3 pieces (depending on your desired size).
  • Prepare the stations: Set up three shallow bowls or dishes. In the first, add the gluten-free flour. In the second, whisk together eggs and milk. In the third, combine panko breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
  • Preheat: If frying, heat about ½ inch oil in a skillet over medium heat. If baking, preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Breading Process:

  • Coat in flour: Working with a few pieces at a time, lightly dredge cheese pieces in flour, shaking off excess.
  • Dip in egg: Dip floured cheese in the egg mixture, letting excess drip off.
  • Coat in breadcrumbs: Thoroughly coat the cheese in the seasoned breadcrumb mixture.
  • Double dip: For an extra crispy coating, dip in egg again, then back into breadcrumbs.
  • Refrigerate: Place breaded mozzarella bites on a plate or baking sheet and refrigerate for at least 15 minutes (this helps the coating set).

Cooking Options:

  • Frying: Once oil is hot (a breadcrumb dropped in should sizzle), carefully add the mozzarella bites in batches. Fry until golden brown, about 1-2 minutes per side. Drain on paper towels.
  • Baking: Lightly spray the breaded mozzarella bites with oil. Bake for 10-12 minutes, or until golden brown and cheese is melted.


  • Serve immediately while hot and melty.
  • Warm up your marinara sauce and provide it on the side for dipping.


  • Experiment with spices: Add a pinch of red pepper flakes for a kick, or try other herbs like basil or oregano.
  • Use quality cheese: Fresh, whole-milk mozzarella string cheese will provide the best taste and melty consistency.
  • Don’t overcrowd the pan: Work in batches if needed to prevent lowering the oil temperature or the bites sticking together.
