Gluten Free Pizza Breadsticks Recipe

For the Dough:

  • 1 and 1/2 cups warm water (approximately 110°F/43°C)
  • 1 tablespoon sugar
  • 1 packet (2 and 1/4 teaspoon) active dry yeast
  • 3 and 1/2 cups gluten-free 1-to-1 baking flour (like Bob’s Red Mill)
  • 1 teaspoon xanthan gum (if your flour blend doesn’t include it)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 2 tablespoons olive oil

For the Topping:

  • 4 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • Grated Parmesan cheese (for serving)
  • Marinara sauce (for dipping)


Make the Dough:

  • Activate the yeast: In a large mixing bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until foamy.
  • Mix dry ingredients: In a separate bowl, whisk together the gluten-free flour, xanthan gum (if needed), Italian seasoning, and salt.
  • Combine wet and dry: Add the dry ingredients to the yeast mixture. Stir in the olive oil. Mix with a sturdy spoon or spatula until a sticky dough forms.
  • Let it rise: Cover the bowl with plastic wrap or a damp kitchen towel and place it in a warm spot to rise for about 20 minutes, or until doubled in size.

Shape and Bake:

  • Preheat oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Divide and shape: Lightly dust a work surface with gluten-free flour. Divide the dough into 10-12 pieces and shape them into long breadsticks (about 6-7 inches long).
  • Prepare the topping: In a small bowl, combine the melted butter, garlic, oregano, garlic powder, and salt.
  • Coat the breadsticks: Brush the breadsticks generously with the garlic butter mixture. Sprinkle mozzarella cheese over the top.
  • Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
