Hash Brown Crust Breakfast Pizza Recipe

This recipe takes your favorite breakfast flavors and combines them into a delicious and fun pizza format. The crispy hash brown crust is a fantastic alternative to traditional dough and pairs perfectly with eggs, cheese, and various other toppings.


For the Hash Brown Crust:

  • 20 oz package frozen shredded hash browns (thawed and patted dry)
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • 2 tablespoons melted butter or olive oil

For the Toppings:

  • 1 cup shredded mozzarella cheese
  • 3 large eggs, scrambled
  • 1/2 cup diced cooked sausage or bacon (optional)
  • 1/2 cup chopped bell peppers (optional)
  • 1/4 cup chopped red onion (optional)
  • Chopped fresh chives (for garnish)


Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or pizza pan.

Make the Hash Brown Crust:

  • In a large bowl, combine the thawed hash browns, eggs, cheddar cheese, garlic powder (if using), salt, and pepper. Mix well until everything is evenly distributed.
  • Transfer the hash brown mixture to the prepared baking sheet and spread it out into a circular or oval shape, resembling a pizza crust. Aim for an even thickness of about 1/2 inch.
  • Drizzle the melted butter or olive oil over the top of the hash brown crust.
  • Bake the crust for 20-25 minutes, or until golden brown and crispy around the edges.

Prepare the Toppings: While the crust is baking, scramble the eggs in a separate pan until cooked through. If using, cook your sausage or bacon until crispy. Chop your vegetables (peppers and onions) if desired.

Assemble the Pizza: Once the crust is baked, remove it from the oven. Spread the scrambled eggs evenly over the top.

  • Add your desired toppings like cooked sausage/bacon, chopped peppers, onions, or any other breakfast favorites you enjoy on pizza.
  • Sprinkle the top with shredded mozzarella cheese.
  • Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
