IHOP Sausage Recipe

Yields: About 1 pound of sausage

Cook Time: 10-15 minutes


  • 1 lb ground pork (80/20 lean to fat ratio is a good choice)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp rubbed sage
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried marjoram
  • 1/8 tsp cayenne pepper (optional, for a bit of heat)
  • 1-2 tbsp maple syrup (optional, for a touch of sweetness)


  • Combine Ingredients: In a large bowl, thoroughly mix the ground pork with all the spices and the maple syrup (if using). Use your hands to ensure everything is evenly distributed.
  • Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or preferably overnight. This allows the flavors to meld.
  • Shape: Decide if you prefer sausage links or patties.
  • Patties: Divide the mixture into portions of your desired size and shape into patties. Aim for around ½ inch thickness.
  • Links: You’ll need sausage casings for this option. Refer to the instructions on your chosen casings and use a sausage stuffer if you have one.


  • Patties: Heat a large skillet or griddle over medium heat. Add a little oil if needed. Cook the patties for about 5-7 minutes per side, or until fully cooked through and a thermometer inserted into the center reads at least 160°F.
  • Links: Follow the same cooking method as patties, adjusting the time as needed depending on thickness.


  • Fresh Is Best: If possible, grind your own pork for optimal freshness. Ask your butcher to use a shoulder cut as it has a good fat-to-meat ratio.
  • Customize: Adjust the spices to your taste preference. You could try a touch of brown sugar, fennel seeds, or smoked paprika for different flavor variations.
  • Don’t Overcook: Overcooked sausages become dry and crumbly. Check for doneness with a thermometer or by cutting into one to ensure it’s no longer pink inside.
