Inner Goddess Detox Salad Recipe

Salad Base

  • 2 cups loosely packed fresh kale, torn into bite-sized pieces
  • 2 cups loosely packed baby spinach, torn into bite-sized pieces
  • 1 cup shredded cabbage or coleslaw mix

Salad Toppings

  • 10 raw, unsalted almonds, roughly chopped
  • 3 strawberries, sliced
  • 1 large carrot, peeled and sliced
  • ¼ cup blueberries
  • 1/3 cucumber, peeled, seeded, and sliced
  • ¼ cup raspberries (or your favorite berries)

  • 20 fresh raspberries
  • 2 tablespoons organic balsamic vinegar
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon fresh lemon juice
  • A pinch of salt
  • Several fresh leaves of mint, basil, or parsley (optional, depending on preference)

1. Massage the Kale: In a large salad bowl, massage the kale for 1-2 minutes, or until it’s tender and slightly broken down. This will make it easier to eat.

2. Combine Greens: Add baby spinach and cabbage to the kale and toss to combine.

3. Prep Toppings: Prepare the almonds, strawberries, carrots, blueberries, cucumber, and raspberries.

4. Make the Dressing: In a blender, combine the raspberries, balsamic vinegar, almond milk, olive oil, lemon juice, salt, and optional herbs. Blend until smooth and creamy.

5. Assemble Salad: Arrange the salad mixture on plates or in a serving bowl. Top with your prepared fruits, vegetables, and almonds.

6. Drizzle the Dressing: Drizzle the raspberry dressing over your salad. If not using all the dressing, store the remainder in an airtight container in the refrigerator.

7. Eat it! Serve immediately for the best flavor and texture.

Customization Tips

Greens: Swap kale and spinach for your favorite lettuce, arugula, or other preferred greens.

Fruits & Veggies: Add different fruits (like melon), or other detoxifying vegetables like broccoli, avocado, or bell peppers. Get creative!

Nuts & Seeds: Switch out almonds for walnuts, pecans, pumpkin seeds, or sunflower seeds.

Dressing: Try different vinaigrette flavors like lemon-tahini, ginger-sesame, or honey-mustard to create exciting flavor combinations.
