Leek and Mushroom Chicken Skillet Recipe

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour (optional, for coating chicken)
  • 2 large leeks, white and light green parts, thinly sliced
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon Dijon mustard
  • Freshly chopped parsley, for garnish (optional)


  • Prep the chicken: Season the chicken pieces with salt and pepper. For a light crispness on the chicken, lightly dredge them in flour.
  • Cook the chicken: Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken pieces in a single layer and cook until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the pan and set aside.
  • Sauté the vegetables: Add the leeks and mushrooms to the same skillet and cook, stirring occasionally, for about 5 minutes until softened and lightly browned. Add the garlic and cook for another 30 seconds until fragrant.
  • Deglaze and create the sauce: Pour in the white wine and deglaze the pan, scraping up any browned bits stuck to the bottom. Allow the wine to reduce by half. Add in the chicken broth, heavy cream, thyme, and Dijon mustard. Bring to a simmer and cook until the sauce slightly thickens, about 3-5 minutes.
  • Finish the dish: Return the cooked chicken to the skillet and nestle into the sauce. Reduce the heat and simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
  • Serve: Season with additional salt and pepper to taste. Garnish with fresh parsley (if desired) and serve immediately over rice, pasta, or mashed potatoes.
