Lighter Chicken Tacos Recipe

For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Toppings:

  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup crumbled feta cheese or queso fresco
  • 1 avocado, sliced or diced
  • Salsa of your choice
  • Lime wedges

Optional Toppings

  • Reduced-fat sour cream or plain Greek yogurt
  • Pickled jalapeños


  • Large skillet or grill pan
  • Small bowls for toppings


  • Prep the Chicken: Cut the chicken into bite-sized pieces. In a small bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Add chicken and toss to coat evenly.
  • Cook the chicken: Heat the large skillet or grill pan over medium-high heat. Add the chicken and cook, stirring occasionally, until cooked through (about 5-7 minutes). Remove chicken from heat and set aside.
  • Assemble the Tacos: Warm your preferred tortillas (corn or flour). Layer tortillas with shredded lettuce, cooked chicken, tomatoes, onion, cilantro, cheese, and avocado.
  • Toppings: Top with your favorite salsa, a squeeze of lime, and any optional toppings.


  • Marinade Option: For extra flavor, marinate the chicken in the spice mix for at least 30 minutes or up to overnight in the refrigerator.
  • Spiciness: Adjust the amount of chili powder for your desired heat level.
  • Tortillas: For the lightest option, use corn tortillas. You can also try lettuce wraps for a low-carb choice.
  • Make it a Meal: Serve with a side of black beans or cilantro-lime rice for a more filling meal.
