Lighter Orange Beef and Broccoli Recipe

Yields: 4 servings
Prep Time: 15 minutes
Cook Time: 20 minutes

  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons orange juice (fresh or from concentrate)
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)

  • 1/2 cup orange juice (fresh or from concentrate)
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon low-sodium soy sauce or tamari
  • 1 tablespoon brown sugar substitute (or regular brown sugar)
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil

Stir Fry:

  • 1 tablespoon neutral-flavored oil (like canola or vegetable oil)
  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 1/4 cup water

Optional Garnishes:

  • Orange zest
  • Sesame Seeds
  • Sliced green onions

  • Prepare your ingredients: Thinly slice the steak. Cut broccoli into bite-sized florets. Mince the garlic.
  • Make the Marinade: Whisk all marinade ingredients together in a bowl. Add the sliced steak and toss to coat. Let marinate for at least 10 minutes, or up to 30 minutes in the refrigerator.
  • Prepare the Sauce: In a separate bowl, whisk together all sauce ingredients until smooth.
  • Blanch the Broccoli: Bring a pot of water to a boil. Add broccoli and cook for 1-2 minutes until bright green and slightly tender. Drain and immediately rinse with cold water to stop the cooking process.
  • Cook the Beef: Heat the oil in a large skillet or wok over medium-high heat. Remove steak from marinade (reserve marinade) and cook in batches. Cook for 1-2 minutes per side, or until browned. Don’t overcrowd the pan. Transfer cooked beef to a plate.
  • Cook the Aromatics and Sauce: Add garlic to the pan and cook until fragrant (about 30 seconds). Slowly pour in the sauce, stirring constantly. Bring to a simmer, and cook until the sauce thickens (about 2 minutes).
  • Finish the Stir-fry: Add the cooked beef, broccoli florets, and the reserved marinade to the pan. Cook for 1-2 minutes, stirring until heated through and sauce coats everything evenly. Add the 1/4 cup of water if the sauce seems too thick.
  • Serve: Serve immediately over rice or your favorite base (noodles, cauliflower rice, etc.) Garnish with orange zest, sesame seeds, and green onions if desired.

  • Steak Options: Flank steak and sirloin are great choices, but other cuts like skirt steak work too.
  • Spice It Up: Adjust the red pepper flakes in the marinade to your desired spice level.
  • Make-Ahead: Prepare the sauce and marinate the beef in advance. Store in sealed containers in the refrigerator until ready to cook.
