Maple Bacon Brussels Sprouts – Gluten-Free Side Dish Recipe

  • 1 pound Brussels sprouts, trimmed and halved (quartered if large)
  • 4-5 slices thick-cut bacon, diced
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons pure maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: 1/4 cup chopped pecans or walnuts for added crunch


  • Prep and Preheat: Preheat your oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper for easy cleanup.
  • The Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.
  • Brussels and Oil: Toss Brussels sprouts with olive oil, salt, and pepper in a large bowl.
  • Bake: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Bake for 20 minutes, or until slightly tender.
  • Maple Magic: After 20 minutes, toss the Brussels sprouts with the maple syrup and cooked bacon. Return to the oven and bake for an additional 10-15 minutes, or until the sprouts are golden brown, caramelized, and fork-tender.
  • Optional Nuts & Serve: If desired, toss with chopped pecans or walnuts during the last few minutes of baking. Serve immediately.


  • Bacon Quality: Choose high-quality, thick-cut bacon for the best flavor and texture.
  • Crispness: For extra crispy Brussels sprouts, broil them for the last 2-3 minutes of cooking time.
  • Make-Ahead: Prep the Brussels sprouts and cook the bacon a day in advance. Store separately in the refrigerator and combine with maple syrup right before baking.
