Maple Bourbon Pecan Chicken – Luscious Gluten-Free Chicken Recipe

  • 1-1/4 lbs boneless, skinless chicken thighs (or breasts if preferred)
  • 1/2 cup gluten-free flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • Maple Bourbon Sauce
  • 2 tablespoons bourbon (Maker’s Mark, or your favorite)
  • 1 cup chicken broth (low sodium if desired)
  • 1/4 cup pecans, coarsely chopped
  • 3 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons gluten-free tamari (or soy sauce if gluten isn’t a concern)
  • 1/4 teaspoon dried rosemary, crushed


Prep the chicken:

  • Pat the chicken dry with paper towels. If using chicken breasts, slice them in half horizontally for thinner, quicker cooking pieces.
  • In a shallow dish, combine flour, salt, and pepper.
  • Dredge each chicken piece in the seasoned flour, shaking off excess.

Brown the chicken:

  • Heat the olive oil in a large (12-inch) skillet or cast-iron pan over medium-high heat.
  • Sear the chicken pieces in batches (don’t overcrowd the pan) for 1-2 minutes per side, or until golden brown. Remove chicken to a plate.

Make the sauce:

  • Deglaze the pan with bourbon, scraping up any browned bits. Allow the bourbon to reduce by half.
  • Whisk in chicken broth, maple syrup, pecans, Dijon mustard, apple cider vinegar, tamari, and rosemary.
  • Reduce heat slightly and simmer sauce for about 5 minutes to thicken.

Finish the chicken:

  • Nestle the chicken back into the skillet with the sauce.
  • Cook for an additional 10-15 minutes (depending on size and thickness of the chicken), or until the chicken is cooked through (internal temperature reaches 165 degrees F). Spoon sauce over chicken during cooking.

Serve and enjoy:

  • This chicken is delicious over rice (white or brown )or mashed potatoes.
  • Steamed vegetables like broccoli, asparagus, or green beans pair perfectly.
  • Garnish with fresh parsley or chives if desired.


  • To toast the pecans: Spread on a baking sheet and bake in a preheated oven at 350 degrees F for 5-7 minutes. This will enhance their flavor.
  • Don’t overcook the chicken: Overcooking will make it dry and tough.
  • For extra richness: Add a tablespoon of butter at the end of making the sauce and swirl it in before adding the chicken back.
  • Adjust sweetness: If you prefer a sweeter sauce, add an extra tablespoon of maple syrup.
