Mini Taco Meatloaf Recipe


Meat Mixture:

  • 1 lb lean ground beef (or ground turkey/chicken)
  • 1/2 cup chopped onion
  • 1/2 cup salsa (choose your favorite heat level)
  • 1/4 cup crushed tortilla chips
  • 1/4 cup bread crumbs (plain or panko)
  • 1 large egg, beaten
  • 1 tablespoon taco seasoning (homemade or store-bought)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Toppings:

  • Shredded cheddar cheese
  • Sour cream
  • Chopped cilantro
  • Diced tomatoes
  • Sliced avocado or guacamole


  • Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a standard muffin tin or line it with muffin liners.
  • Mix the Meat: In a large bowl, combine the ground beef, onion, salsa, tortilla chips, bread crumbs, egg, taco seasoning, salt, and pepper. Mix gently with your hands until everything is evenly combined. Don’t overmix, or the meatloaves will be tough.
  • Shape & Bake: Divide the meat mixture evenly among the muffin cups. Bake for 20-25 minutes, or until the meatloaves are cooked through and an internal thermometer reads 165°F (74°C).
  • Top & Serve: If desired, sprinkle shredded cheese on top during the last few minutes of baking. Let the meatloaves rest for a few minutes before removing them from the muffin tin. Serve with your favorite toppings like sour cream, cilantro, tomatoes, or avocado.
