Peanut Buster Parfait Recipe


Vanilla Ice Cream:

  • 1.5 quarts of good quality vanilla ice cream. Soften slightly for easier layering.

Hot Fudge Sauce:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 2 tablespoons unsalted butter
  • 1/4 cup packed brown sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Roasted Salted Peanuts:

  • 1 cup, roughly chopped


  • Tall parfait glasses or dessert dishes
  • Saucepan
  • Spoon or ice cream scoop


Make the Hot Fudge Sauce:

  • Combine chocolate chips, heavy cream, corn syrup, butter, brown sugar, cocoa powder, and salt in a saucepan over medium heat.
  • Stir constantly until everything is melted and the sauce simmers gently.
  • Remove from heat and stir in vanilla extract.
  • Set aside to cool slightly (it will thicken as it cools).

Assemble the Parfaits:

  • In each parfait glass, add a spoonful or two of warm hot fudge sauce to the bottom.
  • Sprinkle with a layer of chopped peanuts.
  • Add a generous scoop of softened vanilla ice cream.
  • Repeat the layers: hot fudge sauce, peanuts, ice cream.
  • Top with a final drizzle of hot fudge and a generous sprinkle of peanuts.

Freeze and Enjoy:

  • Place parfaits in the freezer for at least 30 minutes for the layers to set slightly. This helps when serving.
