Skinny Chicken and Broccoli Alfredo Recipe


  • Pasta: 12 ounces whole-wheat pasta (penne, rotini, or farfalle work well)
  • Chicken: 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Broccoli: 2 cups broccoli florets
  • Olive oil: 1 tablespoon
  • Garlic: 3 cloves, minced
  • Flour: 2 tablespoons all-purpose flour
  • Chicken broth: 2 cups low-sodium chicken broth
  • Milk: 1 cup low-fat milk
  • Greek yogurt: 1/2 cup plain, non-fat Greek yogurt
  • Parmesan cheese: 3/4 cup freshly grated Parmesan cheese, plus more for serving
  • Salt and pepper: to taste


1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. In the last minute of cooking, add the broccoli florets to the pot with the pasta. Drain the pasta and broccoli together, reserving about 1/2 cup of pasta water.

2. Cook the chicken: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3. Make the sauce: In the same skillet, add the garlic and cook for 30 seconds, or until fragrant. Sprinkle in the flour and whisk constantly for 1 minute.

4. Whisk and simmer: Gradually whisk in the chicken broth and milk. Bring the mixture to a simmer, then reduce the heat to low and cook for 3-5 minutes, or until the sauce thickens slightly.

5. Add yogurt and cheese: Remove the skillet from heat. Stir in the Greek yogurt and Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste.

6. Combine everything: Return the cooked chicken and drained pasta and broccoli to the skillet. Toss everything together to coat evenly with the sauce. If the sauce seems too thick, add some of the reserved pasta water to thin it out.

7. Serve: Garnish with additional freshly grated Parmesan cheese and freshly cracked black pepper. Enjoy!


Customize it: Feel free to add other vegetables like mushrooms, spinach, or bell peppers.

Spice it up: Add a pinch of red pepper flakes for a bit of heat.

Make it ahead: You can prepare the sauce and cook the chicken in advance. Simply reheat everything before combining with the pasta and broccoli.
