Spicy Shrimp and Sausage Skewers Recipe

Yields: 4 servings
Prep time: 20 minutes (+ marinade time)
Cook time: 5-7 minutes


Shrimp: 1 pound large shrimp, peeled and deveined, tails optional

Sausage: 12 oz andouille sausage (or your favorite spicy sausage), cut into 1-inch rounds

Oil: 2 tablespoons olive oil

Cajun Spice Blend

  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust to your heat preference)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Skewers: Metal or wooden (soak wooden skewers in water for 30 minutes prior)

Optional Dipping Sauce

  • 1/4 cup mayonnaise
  • 1-2 tablespoons Sriracha (or other hot sauce)
  • Juice of 1/2 lemon


1. Make the Spice Blend: Combine all the spices for the Cajun blend in a small bowl.

2. Marinate: In a large bowl, toss shrimp and sausage with olive oil and half of the prepared Cajun spice blend. Cover and refrigerate for at least 30 minutes or up to several hours for more flavor.

3. Assemble the Skewers: Preheat your grill or grill pan to medium-high heat. Thread the shrimp and sausage onto the skewers, alternating them for a flavorful presentation.

4. Grill: Lightly oil the grates. Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through, and the sausage is heated through and slightly browned.

5. Make the Sauce (Optional): While the skewers are grilling, combine mayonnaise, Sriracha, and lemon juice. Adjust the amount of Sriracha to your desired spice level.

6. Serve: Serve the skewers immediately, garnished with fresh herbs like chopped parsley or chives if desired. Offer the dipping sauce on the side!


No grill? No problem! You can bake the skewers in a preheated oven at 400°F (200°C) for about 10-12 minutes, flipping halfway through.

Customize the Spice: Get creative with your spice blend. Add brown sugar for a touch of sweetness or other spices like chili powder.

Veggie Option: Thread bell peppers, onions, or zucchini onto the skewers for a vegetarian-friendly version.
