  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the spinach artichoke dip

  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and roughly chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment and Utensils

  • Large skillet
  • Medium bowl
  • Baking dish (9×13 inch is ideal)

1. Preheat the oven

  • Preheat your oven to 400 degrees F (200 degrees C). Grease your baking dish lightly.

2. Prepare the chicken

  • Pat the chicken breasts dry with paper towels.
  • Season both sides of the chicken with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken and cook about 5-6 minutes per side, or until browned and cooked through (internal temperature reaches 165 degrees F).
  • Remove chicken from skillet and let cool slightly before shredding or cutting into bite-sized pieces.

3. Make the spinach artichoke dip

  • In a medium bowl, combine the thawed and squeezed spinach, chopped artichoke hearts, softened cream cheese, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, onion powder, salt, and pepper.
  • Mix until everything is well combined and creamy.

4. Assemble the dish

  • Spread half of the spinach artichoke dip mixture in the bottom of the prepared baking dish.
  • Place the shredded or chopped chicken pieces on top of the dip layer.
  • Spread the remaining spinach artichoke dip on top of the chicken.

5. Bake

  • Bake in the preheated oven for 20-25 minutes, or until the dip is hot and bubbly and the cheese is lightly browned.

6. Serve

Let cool for a few minutes before serving. Enjoy with your favorite dipping options like:

  • Tortilla chips
  • Pita bread
  • Crackers
  • Celery Sticks
  • Carrot Sticks

Make it ahead: Prepare the spinach artichoke dip in advance and refrigerate it. Assemble the dish just before baking when you’re ready to serve.

Lighten it up: Use reduced-fat cream cheese, light mayonnaise, and Greek yogurt for a lighter version.

Spice it up: Add a pinch of red pepper flakes for a bit of heat.

Get creative: Experiment with different cheeses, add some fresh herbs, or a sprinkle of crispy bacon pieces!
