Steak Tacos with Chipotle Cherry Salsa Recipe

For the Steak

  • 1 lb flank or skirt steak
  • 1/4 cup olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

For the Chipotle Cherry Salsa

  • 1 cup fresh cherries, pitted and halved
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

For the Tacos and Toppings

  • 12 small corn tortillas
  • 1/2 cup crumbled queso fresco or Cotija cheese
  • 1/2 cup shredded red cabbage
  • Avocado slices, for garnish (optional)
  • Sour cream, for garnish (optional)

1. Make the Marinade

  • In a small bowl, whisk together olive oil, Worcestershire sauce, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.

2. Marinate the Steak

  • Place the steak in a shallow dish or resealable bag. Pour the marinade over the steak, turning to coat evenly.
  • Cover the dish or seal the bag and refrigerate for at least 30 minutes or up to overnight for maximum flavor.

3. Make the Chipotle Cherry Salsa

  • While the steak marinates, combine the cherries, red onion, cilantro, chipotle pepper, lime juice, honey, salt, and pepper in a medium bowl. Stir gently to combine.
  • Cover and refrigerate until ready to serve.

4. Cook the Steak

  • Preheat a grill or grill pan over medium-high heat.
  • Remove the steak from the marinade and pat dry with paper towels.
  • Grill the steak for 4-5 minutes per side for medium-rare, or until it reaches your desired level of doneness.
  • Let the steak rest for 5-10 minutes before slicing thinly against the grain.

5. Assemble the Tacos

  • Warm the corn tortillas over a gas flame, in a skillet, or in the microwave until soft and pliable.
  • Place sliced steak in the center of each warmed tortilla.
  • Top with the chipotle cherry salsa, crumbled cheese, shredded cabbage, and any other desired toppings like avocado slices or sour cream.

Customize the Spice: Adjust the amount of chipotle pepper in the salsa to control the level of heat.

Don’t Overcook the Steak: Flank and skirt steak are best cooked quickly to medium-rare or medium for the most tender results. For a more well-done steak, cook longer but be aware it may be less tender.

Try Different Toppings: Get creative with toppings like grilled onions, pickled jalapenos, or other favorite salsas!
