Strawberry Blueberry Vanilla Chex Bars Recipe

Yields: 12-16 bars
Prep Time: 10 minutes
Chill Time: Optional (at least 30 minutes)


  • 13.5 oz box Vanilla Chex cereal
  • 1/2 cup white chocolate chips
  • 1/2 cup freeze-dried strawberries, crushed
  • 1/2 cup freeze-dried blueberries, crushed
  • 1/4 cup butter (1/2 stick)
  • 10 oz bag mini marshmallows

Equipment and Utensils

  • Large mixing bowl
  • 9×13 inch baking dish
  • Nonstick cooking spray
  • Microwave-safe bowl


1. Prep: Lightly grease the baking dish with nonstick cooking spray and set aside.

2. Combine dry ingredients: In the large mixing bowl, combine Vanilla Chex, white chocolate chips, crushed freeze-dried strawberries, and crushed freeze-dried blueberries. Set aside.

3. Melt butter and marshmallows: In the microwave-safe bowl, melt butter for about 30 seconds. Add marshmallows, stir well to coat, and microwave in 30-second intervals, stirring in between, until completely melted (about 1 minute total).

4. Mix it up: Immediately pour the melted marshmallow mixture over the Chex mixture. Stir very well until all the cereal is evenly coated.

5. Press and chill: Transfer the mixture into the prepared baking dish and press down firmly and evenly. For easier slicing, let the bars chill in the refrigerator for at least 30 minutes before cutting.

6. Cut and enjoy: Cut into squares and indulge!


Storage: Store these bars in an airtight container at room temperature for up to 3 days.

Get creative: Add other mix-ins like nuts, mini M&Ms, or pretzels for extra texture!

No freeze-dried fruit? You can substitute dried strawberries and blueberries. The texture will be slightly different, but still delicious.
