Tomato Basil Soup with Cheese Tortellini Recipe

Soup Base

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 (28-ounce) cans crushed tomatoes
  • 1 (15-ounce) can diced tomatoes, undrained
  • 4 cups vegetable or chicken broth
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste


  • 1 (9-ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh basil


1. Sauté the aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

2. Build the soup base: Add the crushed tomatoes, diced tomatoes, broth, sugar, basil, oregano, red pepper flakes (if using), salt, and pepper to the pot. Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes, stirring occasionally.

3. Finish the soup: Stir in the tortellini and continue to cook until the tortellini are tender, about 10-12 minutes. Remove the pot from the heat and stir in the heavy cream and Parmesan cheese until well combined.

4. Garnish and Serve: Stir in the chopped fresh basil and adjust seasoning with salt and pepper, as needed. Ladle the soup into bowls and top with additional Parmesan cheese and fresh basil, if desired. Serve with crusty bread for dipping.


Customize it: Feel free to add other vegetables to the soup, such as chopped carrots, celery, or spinach.

Make it creamy: For an even creamier soup, you could use a combination of milk and cream instead of just heavy cream.
