Triple Berry Summer Salad Recipe

Yields: 4 servings
Prep time: 15 minutes

Salad Base

  • 5 oz mixed greens (arugula, spinach, romaine, or a blend)

  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup raspberries

Toppings (Choose your favorites)

  • 1/2 cup crumbled goat cheese or feta cheese
  • 1/3 cup sliced almonds, pecans, or honey roasted pistachios (toasted for extra flavor)
  • 1/4 cup thinly sliced red onion
  • 1 avocado, diced
  • Fresh herbs like basil or mint (optional)

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar (or try strawberry balsamic)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

1. Prep the Produce: Wash and thoroughly dry all greens and berries. Slice the strawberries and red onions (if using). Dice avocado if using.

2. Toast the Nuts (Optional): Toast your chosen nuts in a dry skillet over medium heat for a few minutes until fragrant and lightly browned.

3. Make the Dressing: In a small jar or bowl, whisk together the olive oil, balsamic vinegar, honey/maple syrup, Dijon mustard, salt, and pepper.

4. Assemble the Salad: In a large bowl, combine the mixed greens, strawberries, blueberries, and raspberries. Add your chosen toppings: cheese, nuts, red onions, avocado, and herbs.

5. Dress and Serve: Drizzle the dressing over the salad and toss gently to coat. Serve immediately for the best texture and flavor.

Make it ahead: Prep ingredients in advance and store separately. Combine and dress just before serving.

Customize it: Swap in other berries, try different nuts, or experiment with flavored vinegars.

Adjust the dressing: Taste and tweak the dressing to your liking, adding more sweetness or tang as needed.
