Ultimate Red Skinned Potato Salad Recipe (Mayo Free)


For the Honey-Dijon Vinaigrette

  • 1/2 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • Salt and freshly ground black pepper to taste

For the Potato Salad

  • 1-1/2 pounds baby red potatoes, quartered (or regular red potatoes, chopped)
  • 1 jumbo sweet onion, chopped
  • 1 tablespoon extra virgin olive oil
  • Salt to taste
  • 3 hard-boiled eggs, chopped
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, chopped


1. Make the Honey-Dijon Vinaigrette: In a jar or small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Set aside.

2. Cook the Potatoes: Place the potatoes in a large pot and cover them with cold water. Add a generous amount of salt to the water. Bring to a boil over high heat, then reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.

3. While the Potatoes Cook: Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the chopped sweet onion until softened and translucent, about 5 minutes. Set aside to cool slightly.

4. Assemble the Potato Salad: Once the potatoes are cool enough to handle, cut them into bite-sized pieces and add them to a large bowl. Add the chopped onion, vinaigrette, eggs, crumbled bacon, and green onions. Gently toss to combine everything evenly. Season with additional salt and pepper to taste.

5. Chill and Serve: Cover the potato salad and refrigerate for at least 30 minutes, or up to overnight, to allow the flavors to meld. Serve chilled and enjoy!


  • For a creamier texture, you can mash a few of the cooked potatoes before adding them to the salad.
  • If you don’t have Dijon mustard, you can substitute yellow mustard.
  • For a vegan option, omit the eggs and bacon.
  • This potato salad is also delicious with other chopped vegetables, such as celery, bell peppers, or dill pickles.
